ESSENTIAL INGREDIENTS FOR CRISPY POTATOES
Crafting a perfect batch of these air fryer home fries starts with selecting quality ingredients. Here’s a detailed look at what you’ll need, along with some insights into why each component is key (full measurements are conveniently listed in the recipe card below):

- Potatoes: The star of our dish! We recommend using a good roasting potato. These varieties typically have a higher starch content, which helps achieve that desirable crispy exterior while maintaining a fluffy interior.
- Red Capsicum / Bell Pepper: Adds a beautiful pop of color, a subtle sweetness, and a pleasant textural contrast to the potatoes. Feel free to use yellow or orange bell peppers for a similar effect.
- Brown / Yellow Onion: Provides a foundational aromatic flavor that deepens and sweetens as it cooks, complementing the potatoes perfectly.
- Paprika: Contributes a warm, earthy flavor and a lovely reddish hue, enhancing the visual appeal of the potatoes. Smoked paprika can also be used for an extra layer of flavor.
- Garlic Powder: A versatile spice that infuses the potatoes with a savory, aromatic depth without the risk of burning fresh garlic cloves at high temperatures.
- Cayenne Pepper: For those who enjoy a subtle kick! This adds a touch of heat that awakens the palate. Adjust the amount to your personal spice preference, or omit if you prefer no heat.
- Olive Oil: Essential for coating the potatoes, ensuring they crisp up beautifully and absorb the spices effectively. It also helps in achieving that golden-brown finish. Alternatively, you can use other high-smoke-point oils like coconut oil, grapeseed oil, or avocado oil.
- Salt: Crucial for seasoning and enhancing all the other flavors. Add to taste at the end of cooking for the best results.
Expert Tip: Selecting the right potato variety is paramount for achieving truly crispy results. For this recipe, aim for a good roasting potato. In Australia, these are often labeled as “white potatoes” or “brushed potatoes.” If you’re elsewhere, look for varieties known for their starchiness and suitability for roasting or frying, such as Yukon Gold, Russet (also known as Idaho), Golden Delight, Sebago, or Creme Royale. These types break down slightly on the surface, creating an ideal crunchy crust while remaining tender inside. Avoid waxy potatoes as they tend to stay firm and less crispy.
STEP-BY-STEP INSTRUCTIONS FOR AIR FRYER CRISPY POTATOES
Follow these simple steps to create perfectly crispy and flavorful breakfast potatoes in your air fryer:
- Prepare the Potatoes: Begin by dicing your chosen roasting potatoes into uniform, bite-sized pieces. Aim for roughly 1-inch cubes to ensure even cooking. In a large mixing bowl, combine the diced potatoes with paprika, garlic powder, cayenne pepper, and olive oil. Toss everything thoroughly until the potatoes are evenly coated with the oil and spices. This initial coating is key for flavor and crispness.
- Initial Air Fryer Cook: Carefully pour the seasoned potatoes into your air fryer basket. Ensure they are spread in a single layer as much as possible to allow for optimal air circulation, which is vital for crispiness. Cook at 200°C / 390°F for 15 minutes. During this phase, it’s crucial to shake the basket vigorously every few minutes (every 4-5 minutes) to ensure all sides of the potatoes get exposed to the hot air and cook evenly.
- Prepare the Vegetables: While the potatoes are undergoing their initial fry, take advantage of the mixing bowl you just used. Place your diced bell pepper and onion into the same bowl. Give them a quick toss; there will be residual spices and oil left in the bowl, which will lightly coat the vegetables and impart extra flavor without needing more oil. This little trick helps minimize waste and maximize flavor!
- Combine and Finish Cooking: After the initial 15 minutes for the potatoes, open the air fryer. Pour the seasoned bell peppers and onions directly into the basket, on top of the partially cooked potatoes. Continue to cook for an additional 5 minutes. Remember to shake the basket halfway through this final cooking period to ensure all ingredients are evenly roasted and the potatoes reach maximum crispness. By this point, your potatoes should be beautifully crisp and golden brown, and the vegetables tender-crisp. If they need a little more browning or softness, feel free to cook for a few extra minutes until desired doneness.
- Season and Serve: Once cooked to perfection, transfer the crispy breakfast potatoes and vegetables to a serving dish. Season generously with salt to taste. Serve immediately to enjoy their optimal crispness and warmth.

EXPERT TIPS FOR MAKING THE BEST AIR FRYER BREAKFAST POTATOES
Achieving consistently perfect, crispy breakfast potatoes in your air fryer is simple with a few insider tricks:
- Monitor Your Potatoes Closely: Every air fryer model operates a little differently, with variations in wattage and fan strength. It’s crucial to get to know your appliance. Keep a close eye on your potatoes throughout the cooking process. If you notice they’re browning and crisping up significantly around the 10-minute mark, don’t wait until the full 15 minutes; go ahead and add the capsicum (bell peppers) and onion sooner. This flexibility ensures your potatoes don’t overcook or burn.
- Potato Selection is Key: As mentioned, using a good roasting potato is vital for that ideal crisp exterior and fluffy interior. Starchy varieties are best. If you’re in Australia, opt for “white potatoes” or “brushed potatoes.” Globally, excellent choices include Yukon Gold, Russet (also known as Idaho), Golden Delight, Sebago, or Creme Royale. These potatoes have the right starch content to develop a crust.
- Don’t Overcrowd the Basket: For maximum crispiness, it’s absolutely essential to avoid overcrowding your air fryer basket. Potatoes need space for the hot air to circulate freely around each piece. If you pack the basket too full, the potatoes will steam rather than crisp, resulting in a softer, less desirable texture. If you’re cooking a larger batch, work in two smaller batches to ensure superior results.
- Preheat Your Air Fryer: While not always strictly necessary for every air fryer recipe, preheating for a few minutes can make a big difference for potatoes. A preheated air fryer helps achieve an immediate sear on the potato surface, leading to a faster and more consistent crisp.
- Dry Your Potatoes Thoroughly: After dicing and rinsing (if you do), pat your potatoes as dry as possible with a clean kitchen towel or paper towels. Excess moisture on the surface can prevent them from crisping up effectively and can lead to steaming.
- Uniform Dicing: Aim for consistently sized potato pieces. This ensures that all the potatoes cook at the same rate, preventing some pieces from being undercooked while others are perfectly crisp, or worse, burnt.
- Customize Your Flavors: Feel free to experiment with different spice blends. Onion powder, chili powder, a pinch of cumin, or dried herbs like rosemary or thyme can add delightful variations to your breakfast potatoes.
- No Air Fryer? No Problem! If you don’t own an air fryer yet, you can still enjoy delicious crispy breakfast potatoes. Simply head over to our Crispy Breakfast Potatoes (Oven Version) recipe for instructions on how to achieve similar results using your conventional oven.
- Storage and Reheating: Leftover air fryer potatoes can be stored in an airtight container in the refrigerator for 2-3 days. To reheat and restore some crispness, place them back in the air fryer at 180°C / 350°F for 5-7 minutes, shaking halfway, until heated through and re-crisped.

25 minutes
Air fryer crispy breakfast potatoes are so easy to make and are ready in less than 30 minutes. Pop these tasty potatoes alongside some bacon and eggs for a cafe-style breakfast at home. Â
Ingredients
- 2 Roasting Potatoes , skin on & diced
- ½ Red Capsicum / Bell Pepper, diced
- ½ Brown / Yellow Onion, diced
- 1 tablespoon Olive Oil
- 1 teaspoon Garlic Powder
- 1 teaspoon Paprika
- ½ teaspoon Cayenne Pepper
- Salt, to taste
Instructions
- Mix potatoes, paprika, garlic powder, cayenne pepper and olive oil together in a large bowl.
- Pour potatoes into the air fryer basket and cook on 200C / 390F for 15 minutes, shaking the basket every few minutes. Â
- Meanwhile, place the bell pepper and onion in the mixing bowl you used for the potatoes and mix around a little. There’s always spices and oil left in the bowl so may as well put this to good use.Â
- Pour the bell peppers and onions into the air fryer basket on top of the potatoes and cook for an extra 5 minutes, shaking the basket halfway. The potatoes should be crisp and golden at this point, but if they aren’t cook for a few minutes longer.Â
- Season with salt and serve immediately.
Notes
- Keep an eye on your potatoes throughout the cooking process. Every air fryer works differently, so if you find they are really crisping up around the 10 minute mark, throw the capsicum / bell peppers and onion in then rather than waiting until 15 minutes. Â
- Use a good roasting potato for this recipe. In Australia either potatoes sold as “white potatoes” or “brushed potatoes” will work. Other potatoes that will work – yukon gold, russet, golden delight, sebago or creme royale. Â
- Don’t have an air fryer? Make the oven-version of these – Crispy Breakfast Potatoes.
