THE MAGIC OF TWO-INGREDIENT DOUGH
At the heart of these amazing pizza pinwheels is our incredible two-ingredient dough. If you haven’t tried it yet, prepare to be amazed! This simple yet brilliant combination of Greek yogurt and self-raising flour (also known as self-rising flour) creates a soft, pliable, and wonderfully easy-to-work-with dough that doesn’t require any yeast or proofing time.
The secret lies in the interaction between the acidity of the Greek yogurt and the leavening agents (baking powder and salt) already present in self-raising flour. When combined, they react to produce carbon dioxide, giving the dough a lovely rise and a tender texture, much like traditional yeast-leavened dough but without the wait.
Using full-fat Greek yogurt is generally recommended for the best texture and flavor, as it provides richness and moisture. However, plain regular yogurt can also work in a pinch. This dough is not only incredibly versatile for savory recipes like these pizza pinwheels but can also be adapted for sweet treats, bagels, pretzels, and more. It’s a fundamental recipe that every home cook should have in their repertoire for quick and easy baking.
ESSENTIAL INGREDIENTS FOR DELICIOUSNESS

Gathering your ingredients for these pizza scrolls is a breeze. Here’s a detailed look at what you’ll need to create these delectable treats at home. Remember, the full, precise measurements are conveniently listed in the printable recipe card further down this page.
- Greek Yoghurt: The hero of our two-ingredient dough! Opt for full-fat plain Greek yogurt for the richest flavor and best texture. Its acidity is key to activating the leavening agents in the flour.
- Self-Raising / Self-Rising Flour: This pre-mixed flour already contains baking powder and salt, making our dough incredibly simple. Pro Tip: If you only have all-purpose or plain flour, don’t worry! You can easily make your own self-raising flour by adding 2 teaspoons of baking powder and a pinch of salt per 1 cup of plain flour.
- Tomato Paste: The classic pizza base! Its concentrated flavor provides a robust foundation. Feel free to substitute with pizza sauce, marinara, or even BBQ sauce for a different twist.
- Red Capsicum / Bell Pepper: Finely diced, it adds a lovely crunch, sweetness, and vibrant color. Other finely chopped vegetables like mushrooms, onions, or zucchini would also work beautifully.
- Ham, Pepperoni or Bacon: Your choice of protein provides savory depth. Dice cooked ham or bacon, or use mini pepperoni slices. For a vegetarian option, simply omit or replace with extra veggies.
- Shredded Mozzarella or Cheddar Cheese: The quintessential pizza topping! Mozzarella offers that classic stretchy pull, while cheddar adds a sharper flavor. A blend of both is also fantastic.
- Tinned Pineapple Pieces: (Optional, but highly recommended by some!) Finely diced, pineapple adds a delightful sweetness and juicy burst that pairs wonderfully with savory toppings.
- Dried Oregano: Essential for that authentic Italian-American pizza flavor. You can also experiment with other dried herbs like basil, Italian seasoning, or a pinch of garlic powder.
These pizza scrolls are truly a blank slate for your imagination. Don’t hesitate to raid your fridge and pantry for your personal favorite pizza ingredients. Try different cheeses like provolone or Colby Jack, add a sprinkle of chili flakes for heat, or swap tomato paste for a pesto base. The possibilities are endless!
Expert Tip: Don’t feel like making your own dough from scratch today? No problem! For an even quicker alternative, try these equally delicious pizza pinwheels which utilize store-bought puff pastry as their flaky base.

SIMPLE INSTRUCTIONS FOR IRRESISTIBLE RESULTS
Creating these delicious Air Fryer Pizza Pinwheels is surprisingly straightforward. Follow these easy steps to bring your homemade pizza dreams to life in minutes!
- Prepare Your Air Fryer: Begin by lining your air fryer basket or trays with baking paper (parchment paper). This prevents sticking and makes cleanup a breeze. Remember to always place food on top of the parchment paper before placing it in the air fryer to weigh it down and prevent it from flying into the heating element.
- Start the Dough: In a medium mixing bowl, place your Greek yogurt and give it a quick stir. Add one cup of self-raising flour and mix with a spoon or spatula until roughly combined. Gradually incorporate more flour, a tablespoon at a time, continuing to mix until the dough starts to pull away from the sides of the bowl and form a shaggy ball.
- Knead the Dough: Lightly flour a clean work surface. Tip the dough onto the floured surface and gently knead with your hands for just one to two minutes. If the dough feels too sticky, add a very small amount of additional flour, gradually, until it becomes smooth, elastic, and no longer sticks to your hands or the surface. The dough should be soft but firm enough to hold its shape.
- Roll and Top: Using a rolling pin, roll the dough out into a rectangular shape, aiming for approximately 12×8 inches (30×20 cm) and about ¼ inch (0.6 cm) thick. Evenly spread the tomato paste over the entire surface of the rolled dough, leaving a small border along one long edge. Then, generously sprinkle over all your chosen toppings – the diced capsicum, ham/bacon/pepperoni, pineapple, and most of the shredded cheese, saving a little for the top.
- Roll and Cut: Starting from one of the long edges (the one with the toppings all the way to the edge), carefully and tightly roll the dough into a log. Once rolled, use a sharp knife to cut the log into 8 equal pieces, creating your pinwheels.
- Air Fry: Gently transfer the pinwheels into your prepared air fryer basket or trays. Arrange them in a single layer, ensuring there’s a little space between each one to allow for even cooking and rising. Sprinkle the remaining cheese on top of each pinwheel. Cook in the air fryer at 180°C / 350°F for 12-15 minutes, or until the cheese is beautifully melted and bubbly, and the dough is golden brown and cooked through. Cooking times may vary slightly depending on your air fryer model, so keep an eye on them!
- Cool and Serve: Once cooked, carefully remove the hot pinwheels from the air fryer and transfer them to a wire rack to cool slightly. This helps prevent them from becoming soggy on the bottom. Serve warm, or let them cool completely for lunchboxes and make-ahead snacks.

EXPERT TIPS FOR PERFECT PIZZA PINWHEELS
Achieving perfect Air Fryer Pizza Pinwheels every time is simple with a few insider tricks. Here are some essential tips to ensure your pinwheels are always a success:
- Dough Consistency is Key: The amount of flour needed for the two-ingredient dough can vary slightly depending on the brand and thickness of your Greek yogurt. Start with the recommended amount, then add more flour gradually, a tablespoon at a time, until the dough is soft but no longer sticky. It should be easy to handle without clinging to your hands or the work surface. For an in-depth guide on mastering this versatile dough, be sure to check out my comprehensive two-ingredient dough guide, packed with all the tips and tricks for getting it just right!
- Embrace Customization: These pizza scrolls are incredibly flexible! Don’t be afraid to experiment with your favorite pizza flavors. Instead of traditional tomato paste, try a savory BBQ sauce, a vibrant pesto, or even a creamy white sauce base. Load them up with finely diced vegetables like olives, mushrooms, spinach, or jalapeños for a kick. Different cheeses, such as provolone, feta, or a Mexican blend, can also elevate the flavor profile. The only limit is your imagination!
- Air Fryer Batch Cooking: If you have a smaller air fryer basket, it’s crucial to cook these pinwheels in multiple batches. Overlapping the pinwheels will prevent them from cooking evenly and achieving that desirable golden crispness. Always arrange them in a single layer with a little space between each for optimal air circulation.
- Parchment Paper Safety: When lining your air fryer basket or trays with baking paper (parchment paper), always ensure it is weighed down with food before starting the air fryer. Unsecured parchment paper can easily fly up into the heating element, posing a fire hazard.
- Freezer-Friendly Convenience: These pizza pinwheels are excellent for meal prep and make a fantastic freezer-friendly snack. Once they have completely cooled to room temperature, transfer them to an airtight freezer-safe container or a zip-top bag. They can be stored in the freezer for up to 2 months. To reheat, simply pop them back into the air fryer at 160°C / 325°F for 5-8 minutes, or until heated through and crisp. You can also microwave them, but the air fryer offers superior texture.
- Oven Baking Option: Don’t have an air fryer, or simply prefer using your conventional oven? These pinwheels can easily be baked too! For oven instructions and a slightly different take, check out my recipe for classic pizza scrolls. They’ll still be delicious, just adjust cooking time and temperature accordingly (typically around 180-200°C / 350-400°F for 15-20 minutes).

SERVING SUGGESTIONS FOR YOUR PIZZA PINWHEELS
These versatile Air Fryer Pizza Pinwheels are delightful on their own, but they also pair wonderfully with various dips and accompaniments, making them suitable for almost any meal or occasion.
- Dipping Sauces: Elevate the experience with a side of your favorite dipping sauce. Classic marinara or pizza sauce is a natural choice. Ranch dressing, blue cheese dip, or even a spicy sriracha mayo can add an exciting twist.
- Lunchbox Hero: Pack them cold in lunchboxes for a wholesome and fun alternative to sandwiches. They hold up incredibly well and are always a welcome sight at lunchtime.
- Party Appetizer: Arrange them on a platter for your next gathering. Their bite-sized nature makes them perfect for mingling, and they’re always a guaranteed crowd-pleaser. You can even make mini versions for truly tiny bites.
- Quick Dinner Solution: Pair a few pinwheels with a fresh green salad or a bowl of tomato soup for a light and satisfying weeknight meal that comes together in a flash.
- Breakfast Twist: For a unique breakfast option, try filling them with scrambled eggs, cheese, and a touch of bacon for a savory morning treat.
FREQUENTLY ASKED QUESTIONS (FAQ)
Here are some common questions you might have about making Air Fryer Pizza Pinwheels:
- Can I use plain flour instead of self-raising? Yes, you absolutely can! Simply add 2 teaspoons of baking powder and a pinch of salt to every 1 cup of plain (all-purpose) flour to transform it into self-raising flour.
- What kind of Greek yogurt should I use? Full-fat plain Greek yogurt works best for its richness and texture. While low-fat can be used, it might result in a slightly less tender dough. Avoid flavored yogurts for savory recipes.
- My dough is too sticky/too dry, what should I do? If your dough is too sticky, gradually add a little more flour (a tablespoon at a time) and knead until it’s workable. If it’s too dry and crumbly, add a tiny bit more Greek yogurt (a teaspoon at a time) until it comes together. The ideal dough should be soft but not sticky.
- Can I make these ahead of time? Yes! You can prepare the pinwheels up to the point of air frying, then cover them tightly and refrigerate for up to 24 hours. Alternatively, bake them, let them cool, and freeze as described in the tips section.
- How do I store leftovers? Store cooled pizza pinwheels in an airtight container in the refrigerator for up to 3-4 days. Reheat in the air fryer for a few minutes to restore crispness, or enjoy cold.
- Can I make these gluten-free? While the core recipe uses wheat flour, you might be able to achieve a similar result with a gluten-free self-raising flour blend. However, results can vary significantly with gluten-free alternatives, so some experimentation may be required.

- ½ teaspoon Dried Oregano
