  1. Heat oil in skillet pan on medium heat.  Add garlic and sauté for 30 seconds.  Add spinach and sauté until wilted.  Remove pan from heat, season spinach with salt and pepper and allow to cool slightly.
  2. Lay out puff pastry sheet on a clean and flat surface.  Spread cooked spinach, feta and parmesan cheese evenly across the puff pastry sheet.  Roll the puff pastry sheet up tightly.  Use a sharp knife to cut into 12 scrolls.
  3. Place scrolls in the air fryer basket, then cook on 180C / 350F for 15 minutes or until golden and cooked through. 

Notes

  • If you plan to serve as an appetiser you can brush the outside of the pinwheels with a simple egg wash before baking. This gives the pastry a deep golden colour but doesn’t change the taste.
  • You can easily double or triple the recipe to feed a crowd.
  • Once pinwheels are cooled completely, store in an airtight container in the fridge for 2 days, or in the freezer for up to 2 months.  
  • Reheat frozen pinwheels in the oven or the air fryer (180C / 350F) for 10 mins or until warmed through.
