  • 1 400g / 14.5 oz can diced tomatoes
  • 500 ml / 2 cups chicken or vegetable stock , use more if you prefer a thinner soup
  • ½ head green/savoy cabbage, thinly sliced
  • ½ cauliflower, cubed
  • 3 medium carrots, thinly sliced
  • 4 celery stalks, thinly sliced
  • 1 brown onion, diced
  • 2 cloves garlic, minced
  • 2 tsps Italian Seasoning, OR 1 teaspoon Oregano & 1 teaspoon Thyme
  • ½ teaspoon Cayenne pepper, OR more if you like spicy
  • Salt + Pepper, to taste

Instructions

Stovetop Version

  1. Heat oil in a large pot over medium heat. Add onion, celery, carrot and garlic and cook, stirring for 3 minutes, until the onion is soft.
  2. Add cauliflower and cabbage and continue to cook, stirring, for 1-2 minutes.
  3. Add stock, diced tomatoes, cannellini beans and season with Italian seasoning, salt, pepper and cayenne pepper and stir to combine.
  4. Bring to boil and let simmer for 20 minutes, or until vegetables are cooked.
  5. Serve as is or with your favorite toppings (Parmesan, crusty bread etc) and enjoy.

Instant Pot (IP) / Electric Pressure Cooker Version

  1. Select sauté mode on IP or pressure cooker. Heat the oil, then add onion, carrot, celery and minced garlic and cook, stirring regularly, for 3-5 minutes.
